The Kick off to Summer Vacation

The La Petite Peach team is taking a two week hiatus! All of us here at headquarters, and in our Boston satellite location have been working hard around the clock, and are deserving of some R&R! Every summer while I was growing up, we would pack up and go to Martha’s Vineyard. It’s only a boat ride away from Cape Cod but it always felt worlds away. I love that now I get to take my own family there for some relaxing and fun in the sun. The landscape reminds me of Europe with it’s rolling hills and endless stone walls. For the salad:

2 Tisbury Farmers market Tomatoes

good olive oil

french baguette from the Chilmark store

1 red bell paper

1 orange bell pepper

1 whole cucumber

3 springs of green onion

2 basil leaves coarsely chopped

For the dressing:

1/2 tsp of garlic

1.2 cup of olive oil

1tsp of cape cod sea salt

1 1/2 tsp of fresh ground pepper

4 TBS of red wine vinegar

Directions:

1. chop up baguette into cubes and place on a pan at 400 degrees with a drizzle of olive oil and a pinch of salt and pepper for 15-25 min until golden brown

2. Chop veggies into cubes and add basil

3. Place all ingredients into a bowl with the dressing and let sit for 15-30 minutes before serving

It has been almost 5 years since I visited Europe last, and I can’t believe that my boyfriend and I have an opportunity to spend some time there together! We rented an apartment in the middle of Rome for a whole month, and are so excited to explore our neighborhood, get our espressos from the morning café, create meals with fresh Italian produce, and take adventures to other parts of Europe. Take a look at what I am packing for my trip; I am only bringing the essentials since I plan on making some purchases while we are there! Growing up on Cape Cod was a one of a kind childhood that I am so happy to have experienced. It’s an hour away from Boston, and no more than ten minutes away from any beach. I love that it is so accessible to the city but is removed from the chaos of it all. Once you drive over the bridge you can’t help but slip into a more relaxed state of mind. The rolling dunes, and local ice cream shops set the tone for a perfect summer day. I am so excited to share some of my things I love, and places to go on Cape! It really is such a special place and I hope you enjoy some of my favorite pieces of it! – Ashley
